Word of the Day: Monder



Monder (mōn-DAY) - To peel by blanching (hot foods then submerged into a ice cold bath)



MONDER


Food that you would typically use: Tomatoes
Monder steps:

BLANCH (boiling water) Tip- make a X on the bottom of the tomato, this will to peel them.

SHOCK (ice cold water)

PEEL

Final product :


ALSO: Concasseee means to dice once the above steps are completed.
